Fully oxidized after picking, black teas have a strong,
full flavor and body. Optimal brewing temperature is 205°
and the liquor is best enjoyed when steeped between 3 and
5 minutes. Brewing beyond five minutes will cause the flavor
tannins to become sharp in the cup.

With so many wonderful benefits of green tea, it's
no wonder they've become so popular. Not only do they have
a light and delicate flavor, but the presence of antioxidants
makes it a healthful beverage. Green tea is best brewed at
170° and steeped approximately 3 minutes.

Oolong teas, which are semi oxidized after plucking,
have a unique liquor and flavor reminiscent of black tea,
but without the prominent tannic overtones. The balance between
the flavor and body is somewhat fuller and more defined than
green teas. Best brewed at between 180° and 200° and
steeped between 3 and 4 minutes.

Essential oils, botanicals and essences are added to
these teas to bring about a balance of flavor and aroma. The
base tea is either a black tea or a semi-oxidized tea.

balanced elements that cannot be experienced with straight
garden teas. Many of our blends stand up nicely to the addition
of milk or sweeteners. We are also happy to make recommendations
